Coconut Bake

300ml coconut milk
2 tablespoons oil
18oz/ 500g / 3½ cups plain flour
¾ cup/ 200ml grated coconut (optional but nicer with it!)
1¼ tsp salt
1½ tsp yeast

Put the ingredients in the order given into a Food Processor, which has a dough hook, and knead for 5 minutes. Remove from Food Processor, and leave to rise for an hour or so covered with a damp cloth. Knead again for a few minutes, and shape as desired (round is the norm in Tobago!). Leave for 20 minutes covered with a damp cloth and then bake for 20minutes at 400°F/195°C.

Alternatively using a Bread Maker set on 'Dough' cycle, placing the ingredients in the order given. When the cycle is complete, knead into a round shape and bake as above.
